How to cook great scrambled eggs

How to cook great scrambled eggs:
  • buy eggs that have been laid by free range chickens, non caged chickens
  • take the eggs out of the fridge at least an hour before you want to cook them -this prevents them being "shocked" when you add them to the hot pan
  • use a non-stick pan
  • cook with butter instead of oil - you only need a little butter
  • heat the pan - use low heat
  • gently melt the butter
  • in a separate bowl whisk the eggs and add a small amount of milk, or yoghurt or you could add feta cheese
  • adds egg mix to the pan
  • pop down the toast, so it is ready about the same time as the eggs
  • keep eggs moving in the pan as they cook, use a wooden spoon or spatula
  • turn off the heat before the eggs are fully cooked - the heat of the pan will continue to cook the eggs
  • serve hot with toast, or wholemeal pancakes
